Optional extras: we recommend adding a pinch of nooch and a splash of tamari whilst frying the tofu, and a dash of lime juice at the end will give this dish a welcome bit of zest!
Finely chop the garlic and chillies and fry them in a little olive oil on a high heat until the garlic starts to brown.
Add the tofu. I find the best way to achieve the perfect scrambled consistency is to simply crumble the tofu in your hands straight into the pan. (If you haven’t pressed your tofu beforehand, I recommend crumbling it into a colander to drain off any excess water and then pour it straight into the pan.)
Add the turmeric, salt, pepper, nooch, tamari, and black salt whilst stirring constantly.
When the tofu turns golden and starts to crisp ever so slightly, reduce the heat and add 400g chopped tomatoes. Add a splash of lime juice (or the juice from half a lime if you have fresh limes) and leave to simmer for two minutes.
Prepare your wraps (10 seconds per wrap in the microwave or 5 seconds in an unoiled frying pan).
Serve with a sliced avocado on the side!
N.B – As this is a ‘Five Minute Meal’ we’ve served it with with tortilla wraps – although, if you have the time, we’ve included organic long grain brown rice with our meal kit. We chose this rice as it’s the cheapest, although it does take about 45 minutes to cook.
